SHAGIDI OR EGWA HIKAJE

We have been trying out some recipes on plantains (the unriped species in particular) anyhow this is a slight digration from plantains, Please enjoy it for a change.


Black Eyed Beans Dish

Recipe 4

Serves 6

10 oz. Black eyed Beans 250 g
1/4 oz. Dried Fish (Sawa) 5 g
1/4 oz. Dried Fish (Agbodo) 5 g
5 oz. Frozen shrimps (Ede) 125 g
2 oz. Dried Ground Shrimps 50 g
1/4 oz. Dried Ground Fish 5 g
5 oz. Groundnut Oil 125 ml
Salt and Pepper to taste.


-Soak Beans. Remove the skin.
-put water to boil. Add washed beans into it and cook.
-Season and boil peeled shrimps.
-Prepare dried fish, wash and drain.
-When cooked, drain the beans, must be soft and not too wet.
-Mash beans with wooden spoon.
-Add dried fish, shrimps and oil.
-Season to taste.
-Cook a little further till beans are fairly dry.
-Serve on a flat dish, with any red hot peppered sauce.
-Garnish as you desire.
