Corn And Beans Pottage

Serves 6


7 oz. Beans 175 g
6 oz. Fresh or dried Maize 150 g
1 oz. Ground Pepper 25 g
2 1 oz. Smoked Fish or Crayfish 10 g
2 1/2 pts. Water 2,200 ml
A Dash of Potash
-Remove corn from the cobs if fresh, and cook in water for about 50 mins.
-If dried corn is used, soak in water overnight, steam, cook.
-Wash the beans. Add to the corn.
-Add the potash. Cook until soft, for about 70 mins.
-Add other ingredients. Cook until mixture is a bit squashed together for about 1 3/4 hrs.
-Add salt.
-Serve on its own, garnish as desired.
