Beans And Plantain Pottage

Recipe 3

Serves 6

10 oz. Black eye beans 250 g
8 oz. Firm ripe plantain 200 g
2 1 oz. Palm oil 50 ml
2 1/4 oz. Smoked fish 60 g
1 tsp. Onions(crushed)
1 tsp. Pepper(ground)
1 tsp. Salt
3 pts. Water

- Wash and cook the beans until almost done (1 hr.)
- Cut plantain into cubes. Add the beans. Cook for about 20 mins.
- Add remainder of the ingredients. Cook until mushy.
-Add salt to taste.
- Serve hot on its own, or with garri or eko.

Variation:
Use pumpkin or yam instead of plantain.
