FREJON

I remember the days when i was growing up down home in the East, my Mother will always organise a free Lunch for all the Youth in my Church during the Easter period (Good Fridays) to be precise. We all waited eagerly for the "frejon" meal which we ate with relish.
RECIPE 7

Serves 6



9 oz. Black or Brown Beans 225 g
1 small coconut
2 pts. Water
3 - 4 cloves



- Wash beans and boil until mushy.
- Mash into a smooth paste using wooden spoon or blender.
- Break the coconut. Grate the nut into the coconut milk.
- Add water. Strain to obtain coconut milk.
- Add the coconut milk and beans. Strain.
- Add cloves.
- Boil in an uncovered saucepan until thick, about 1 1/2 hr.
- Add salt to taste.
- Serve with fish stew and Garri.


VARIATIONS:

-
Add pepper, crayfish, salt, tomatoes to the mashed beans and coconut mixture.

- Sweet Frejon:
Add sugar. Chill to harden or make it thinner so that it could be drunk with a spoon and serve in glass dish with biscuits.
