Creamy Macaroni and Cheese


Ingredients
2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
4 tablespoons (1/2 stuck) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Directions
Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

BROWN BEANS SOUP (OWOSEMI)

Owosemi as is widely known in the South Western part of Nigeria is a beautiful deviation from the every day soup.

It is more popular because unlike other soups that you can use to transport your Eba, Pounded yam or Semo food home, Owosemi can be used for all and sundry; from swallows to boiled yam, rice or even boiled plantains.

Recipe 11

Serves 8

3 Lbs. Dry Beans coress 1 1/2 kg
or periwinkle
1/2 Lb. Shelled Beans 250 g
8 pts. Water 4 Ltr.
1 pt. Oil 1/2 ltr.
1/4 tsp. egidije
1 whole green Plantain
5 oz. Dry Crayfish 125 g
2 Lbs. Dry fish (smoked) 1 kg
1 Lbs. Dry Bush Meat 1/2 kg
1/4 tsp. Dry pepper
Owomumu (salt)
Epo firifiri

- Wash dry beans. Cook in cold water for 1 hr. with the beans.
- Add the well cleaned bush meat, smoked fish and plantain.
- Cook for another 15 mins.
- Remove the seed and add the crushed skin of the egidije.
- Add the crayfish.
- Remove plantain from beans. Mash.
- Add the salt (owomumu; please note that any other one will turn the soup watery) and epo firifiri.
- Simmer for another 20 mins. stirring occasionally.
- Serve hot with starch, boiled yam or boiled plantain.

As you go every inch of the recipe take care not to disregard the tiniest details because it really could make a whole lot of difference. Just go whaooooooooohhhhhhh!!!!!!!!!!!!!
