COCONUT BISCUITS

Today we digress a little bit and bring you a lovely in-between-meal snack, no one has tried this recipe without coming back asking for more let's see how you will enjoy this with your Tea - Break.

Recipe 10

Makes About 18

4 oz. Flour 100 g
2 oz. Margarine 50 g
2 oz. Sugar 50 g
Little coconut milk
4 oz. Grated coconut 100 g


- Cream margarine and sugar until soft and creamy.
- Add the flour and grated coconut. Mix together to get a stiff rollable paste.
- Add very little coconut milk if necessary.
- Roll out evenly on a floured board. Cut into desired shapes.
- Pinch with a fork.
- Put carefully on greased baking tins.
- Bake in a moderate hot oven, 10 - 15 mins. until lightly brown.


VARIATION:

An egg may be added.
