SAUTE POTATOES

Potatoes gives a fresh new start and are quick and easy to make meals which could be great if handled with the tender kitchen touch. Here is a wholesome method of enjoying your potatoes new or old.

Serves 4

1 lb. New Potatoes 1/2 kg
Or
1 1/2 lb. Old Potatoes 3/4 kg
Butter


-Select medium sized potatoes. Scrub well.
-Plain boil or cook in the steamer.
-Cool slightly. Peel.
-Cut into 1/8 in. (3mm) slices.
-Toss in hot shallow fat until lightly browned.
-Season with salt.
-Serve in a vegetable dish. Sprinkle with chopped parsley.


VARIATIONS:

Lyonnaise: Cook 8 oz. (200 g) sliced onion in fat. Combine with the saute potatoes.

As you can see this is a very simple but mouth-watering delicacy from the heart of the Northern Nigeria and cuts across ethnic barriers, this is one meal accepted by many! enjoyed by all!!!!! Cheers and do share your experience as you try it out.
