COLESLAW

Recipe 24

Serves As Estimated

¼ pt. Mayonnaise 125 ml

8 oz. White or Chinese 200 g

Cabbage

2 oz Carrots 50 g

1 oz. Onions 25 g

- Trim off the outside leaves of the cabbage.

- Cut into quarters. Remove the centre stalk.

- Wash and shred finaly. Drain well.

- Mix with a fine julienne of raw carrots and raw onions.

- Bind with the mayinaise

COCONUT RICE (Edesi Isip)

If you have not experienced Rice in the most beautiful way, then you do not know what you are missing in the sumptuos and mouth watering delicacy ever "Coconut Rice". Just try this out and you'll be glad you did.

Recipe 6

Serves 6

1/2 -1 1/2 pt. Water 1/4-3/4
1 1/2 lb. Rice 3/4 kg
3 lbs. Coconut 1 1/2 kg
2 lbs. Chicken 1 kg
2 lbs. Smoked or Fresh Fish 1 kg
8 oz. Fresh Shrimps 200 g
4 oz. Ground Crayfish 100 g
1/4 oz. Atarodo 5 g
8 oz. Onions 200 g
Salt
Stock Cube

-Break and grate the coconut. Add the water and squeeze.
-Strain. Allow to stand for 10 mins.
-Skin and keep part of coated coconut milk.
-Put 1/4 of the coconut water in a pot. Add the stock cubes, onions, pepper. Boil for 5 mins.
-Add the washed rice.
-Boil rapidly for 10 mins. Reduce the heat. Simmer for 20 mins. Stir.
-Add the fish, chicken and shrimps. Add the remaining stock from meat.
-Stir mixture carefully. Add the remaining skimmed milk from coconut, as required.
-Reduce heat. Add crayfish. Simmer until properly cooked.
-Correct seasoning.
-Serve garnished with tomatoes, onion rings and lettuce, or with carrots and green pepper or peas.

VARIATION:

Add 2 tbsp. tomato puree and 4 fresh tomatoes and a pinch of thyme before adding the rice.
